Turkey Veggie Stuffed Peppers Recipe

Ingredients
4 bell peppers, halved and seeded
1 lb (450 g) lean ground turkey
1 cup cooked rice or quinoa
1 small onion, diced
1 cup chopped spinach or zucchini
1 cup diced tomatoes (fresh or canned)
1 tsp Italian seasoning
2 tbsp olive oil
Salt & pepper to taste
Optional: ½ cup shredded cheese
Method
1. Preheat oven to 375 °F (190 °C). Sauté onion in olive oil until soft, add turkey, and cook until browned. Stir in veggies, tomatoes, rice, and seasoning.
2. Spoon the mixture into pepper halves. Arrange in a baking dish with a splash of water at the bottom.
3. Cover with foil and bake for 25 minutes (uncover and add cheese if using for the last 5 minutes).
Gluten-Free: Use quinoa or cauliflower rice.
Vegetarian Swap: Replace turkey with lentils or chopped mushrooms.
