Teriyaki Chicken Bowls- What's For Dinner Challenge

This teriyaki chicken bowl is an easy and healthy gluten-free dinner recipe that is ready in about 30 minutes! With crispy pan-fried chicken, fresh veggies, and a simple teriyaki sauce that is sweetened with pure honey. Perfect over rice!

Teriyaki Chicken Bowls

 

Servings: 4

Ingredients

2 chicken breasts, sliced
1 tablespoon olive oil
2 cups cooked rice (white or brown)
1 cup broccoli florets
1 red bell pepper, sliced
1 carrot, shredded
2 green onions, sliced

Teriyaki Sauce

¼ cup soy sauce
2 tablespoons honey or maple syrup
1 tablespoon rice vinegar
1 teaspoon grated ginger
2 cloves garlic, minced
1 teaspoon cornstarch + 2 tablespoons water

Method

  1. Heat oil in a pan over medium heat. Cook chicken until browned and cooked through. Remove and set aside.

  2. In the same pan, sauté broccoli and peppers until just tender.

  3. In a small saucepan, combine soy sauce, honey, vinegar, ginger, and garlic. Bring to a simmer. Stir in cornstarch slurry and cook until thickened.

  4. Return chicken to the pan and toss with sauce.

  5. Assemble bowls with rice, vegetables, and teriyaki chicken. Top with green onions.

Notes

This can be served with any veg on hand, as well as noodles
