This is comfort food that still feels bright and fresh. Lemon, garlic, and oregano turn simple chicken and potatoes into something deeply satisfying — with almost no cleanup.

Ingredients
4 chicken thighs or breasts
1 lb baby potatoes, halved
3 tbsp olive oil
Juice of 1 lemon
4 cloves garlic, minced
1 tsp dried oregano
Salt & pepper
Chopped parsley
Method

Preheat oven to 400°F / 200°C.

Toss potatoes with half oil, salt, pepper. Roast 15 minutes.

Mix remaining oil, lemon, garlic, oregano. Coat chicken.

Add chicken to tray and roast 25–30 minutes until cooked through.
Make It Better:
Add cherry tomatoes or zucchini last 15 minutes.
