A hearty, satisfying bowl that’s easy to customize and perfect for busy nights.
Servings: 4
Ingredients
1 lb ground beef (or sliced flank/striploin)
1 tablespoon olive oil
1 teaspoon chili powder
½ teaspoon cumin
½ teaspoon paprika
Salt and pepper, to taste
2 cups cooked rice
1 cup black beans
1 cup corn
1 avocado, sliced
½ cup shredded cheese
½ cup salsa
¼ cup sour cream or Greek yogurt
Fresh cilantro
Lime wedges
Method
Cook the Beef
-
Heat olive oil in a skillet over medium heat.
-
Add the ground beef and cook until browned, breaking it up as it cooks.
-
Drain excess fat if needed, then stir in chili powder, cumin, paprika, salt, and pepper. Cook for another 2–3 minutes until well seasoned.
(If using sliced steak instead, season and sear quickly over high heat until cooked to your liking, then slice.)
Prepare the Bowl Components
Warm the rice, black beans, and corn.
Slice the avocado and prepare toppings.
Assemble the Bowls
Divide rice into bowls.
Top with seasoned beef, beans, corn, avocado, and cheese.
Add salsa and a dollop of sour cream or yogurt.
Finish with fresh cilantro and a squeeze of lime.
Notes
Make It Your Own: add sautéed peppers, pickled onions, or hot sauce
