Gazpacho - Rambling Style Files

It's time for my rambling style files, where I discuss all things rambling from fashion to recipes to gear and everything in between.
 

It's tomato season where I live … one of my favorite times of the year. There is nothing like the taste of a fresh tomato. Imagine living in a climate where tomatoes are always in season. I would turn into a tomato. 

When tomatoes are in season, they are beyond delicious … juicy, sweet, and packed with flavor. They are perfect for all kinds of dishes. One of the easiest, most refreshing ways to enjoy them is by making a simple gazpacho.

Gazpacho is super easy to make and perfect for entertaining. You can serve it in a mug for a casual lunch or shot glasses for a sophisticated appetizer at parties. It is a crowd-pleaser. Plus, it’s easy to store in the fridge, allowing you to make it ahead of time. 

It is also a refreshing post-ramble snack or meal. To make it more filling, you can add avocado, slivered almonds, or a dollop of Greek yogurt. Honestly, add whatever sounds yummy to you.

One of the great things about making any soup, hot or cold, is that you can dictate the texture. If you don’t like chunky, make yours smooth by blending it for longer. 

This is such a hit in my household that I cannot keep it in the fridge without it disappearing! I now double the recipe whenever I make it. 

Gazpacho

Ingredients:

  • 3-4 small cucumbers (they tend to be less watery)
  • ½ red onion
  • 6 large tomatoes
  • 3 garlic cloves minced
  • 2 tablespoons sherry vinegar
  • ¼ cup extra virgin olive oil
  • 2 teaspoons sea salt
  • Black pepper to taste

Method:

  • Chop cucumbers and blend
  • Chop red onions and blend
  • Chop 3 tomatoes and puree
  • Chop 3 remaining tomatoes to a chunky consistency
  • Mix all ingredients in a bowl 

There you have it … as easy as 1 - 2 - 3!!
