Cream Cheese Board - Rambling Style Files

It's time for my rambling style files, where I discuss all things rambling from fashion to recipes to gear and everything in between.
 

Do you like to host parties? I certainly do.

Hosting can mean a lot of work, so I am always on the lookout for simple, delicious recipes. One of my go-to cooking instructors is Pamela Salzman. She has two amazing cookbooks, a website, and an awesome Instagram.  I have yet to make a recipe of hers that is complicated or that I don't love. 

Recently she posted a cream cheese board on her Instagram, which had me salivating. I entertained over the weekend, so I decided to give it a whirl.

It had the criteria I require when I host: failproof, simple ingredients, easy to make, beautiful presentation, and of course, delicious. That it was and more… what a crowd-pleaser!! The compliments were flowing. 

Here is the recipe and instructions!

Cream Cheese Board Recipe

Spread dollops of softened cream cheese on a board.
Top with whatever toppings you like.

My favorites are . . .

Pickled onions (see recipe below) or raw red onions
Cut up fresh dill
Capers
Lemon Zest
Fresh dill
Your favorite salt seasoning

Pickled Red Onions Recipe

2 Tablespoons red wine vinegar
1 tablespoon cane sugar
½ teaspoon salt
1 cup water|
1 red onion sliced

Combine vinegar, sugar, salt, and water in a saucepan and bring to a boil.
Add the sliced onions and simmer for 15 minutes.
Drain onions and set aside to cool.

I served my board with bagels, sliced tomatoes, cucumbers, and smoked salmon. 

This got me thinking that you could even do this with hummus, guacamole, and salsa. How about blended ricotta cheese drizzled with honey and fresh herbs or sundried tomatoes and olives?

This is easily adaptable for anyone who doesn’t eat dairy. The possibilities are endless. Feel free to experiment with your own toppings. 

An easy post-ramble meal or snack that will have your guests in awe of your culinary skills!
